What program is the best for converting video files to become compatiable with a Video iPod?

I am planning on getting a 30GB iPod video this week. I have a bunch of video files on my PC that I’d like to put onto it. From what I understand, they need to be a certain file type (MP4?). I have mostly AVIs and MPGs. What is a good program to convert these files to become iPod ready (fit within the screen confines, possibly decrease size, etc.)?
