First you’ll need to make sure itunes is NOT set to sync (this should be somewhere in the top menus, if you can’t find it search with the help option), if it is and you plug your ipod in you’ll lose everything. Next you’re going to need to put your ipod into disk mode so that you can move stuff around freely (this basically turns it into flash drive that can hold all types of files.)
You can see how to do this here:
http://support.apple.com/kb/HT1363
After that’s done open your ipod in file folder view (like you would a flash drive) and drag or copy the files to itunes.

You can use an ipod to iTunes transfer program to help.I personally use Cucusoft iPhone/iTouch/iPod to Computer Transfer. It helps me to transfer my songs/videos/photos from ipod to my computer itunes directly and safely. It works well for me,you can give it a try.
Free download it at: http://dvd-video-soft.com/ipodconverter/ipod-itouch-iphone-transfer.html
It even has step-by-step guide on the whole process.

Here is an easy way I’ve used. That is to use this popular iPod-to-iTunes transfer program called iPod rip
http://www.gutensoft.com/Utilities/joboshare-ipod-rip.html
Many of my friends recommended it to me when I needed to transfer all my songs, videos, playlists and photos from my iPod to my iTunes.
With just a few simple clicks, it will help you transfer all songs/videos and other files from iPod to iTunes and from iPod to your selected folder on your computer.
More importantly, this won’t overwrite any original files on your iPod. And all song titles and playlists are preserved.
Hope this can help.

itunes blocks this function since itunes is the tool with one way to transfer files from itune to ipod. you must utilize other tools to achieve that. There’re couple of tools for transferring the files between ipod and computer (for backup)depends on your demands, e.g transfer only songs/videos, transfer photos etc. You can have a look of below review site, hope it useful.
